VTT (Technical Research Centre of Finland) is an impartial expert organisation with staff of 3,000 and a turnover of Euro 200 million. VTT Biotechnology is one of the eight research institutes of VTT. Its main target is to develop processes and product innovations based on biological materials.

The research in food field aims at innovations for internationally competitive food processes and the products. The focus is on understanding, optimising and maintaining the sensory quality and positive health effects of food products throughout the production chain.

Research and development is carried out in joint interdisciplinary projects with industry and universities or in confidential contract work with industrial customers. 300 people are employed by VTT Biotechnology. The turnover was Euro 18 million in 1999.

The expertise of the Consumer and Sensory Studies group includes the role of sensory quality and consumer attitudes in food choice. The group has wide experience in carrying out consumer studies that combine product characteristics with attitudinal factors as determinants of food choice.
